Hopiate IPA is our biggest and most explosive IPA yet, barely edging out Bicentennial IIPA.

We included a new hop for us: Mosaic. Mosaic™ is an aroma hop variety developed by Hop Breeding Company that was released in 2012. It offers a unique and complex blend of floral, tropical, fruity and earthy characteristics. Mosaic™ is the daughter of Simcoe® and a Nugget derived male.

Columbus is a super-high alpha hop that contributes mightily to bitterness and that’s why we use it.

Citra® is another hop developed by Hop Breeding Company in 2007, in a joint venture with John I Haas and Yakima Chief. We use it for its high alpha acids and distinct citrus notes that come into play in finishing and dry hopping.

It’s hard to say how this one will get into a solid rotation, because Mosaic and Citra hops are extremely hard to get ahold of. When we brew it, enjoy it while it lasts!
